Just returned from a trip to La Cruz de Huanacaxtle, an up and coming fishing village about 25 minutes North of Puerto Vallarta. Yes, hardly an Italian delicacy, this somewhat decadent dish comprised of a roasted Poblano pepper stuffed with a complex forcemeat of beef, dried fruits and nuts, and sauced with a blend of walnuts cream and pomegranate, is a seasonal treat and we got lucky...
